There’s something quietly cinematic about Dublin in the early evening. Having lived in the city for many years, actually very close to The Wilder, I’m grateful to know it intimately. The way the light falls through Georgian windows, the hum of the city softening as you move just a little beyond the noise to where the Wilder sits, right there in that very specific space between bustle + calm. Tucked discreetly on Adelaide Road, its red-brick façade whispering of another era, it invites you into another world, an escape.

The Wilder has been in our world for some time. Having first stayed there around the time it opened in 2018 after an extensive refurbishment, it’s threaded itself in + out of our lives ever since. It’s actually where my husband loved to stay too when visiting Dublin for work in the years we lived abroad. Each stay works to further cement its place as one of the city’s hidden treasures, from the moment you step through its wrought-iron gate, you can sense your shoulders relax — that instant awareness you’ve arrived somewhere intimate. Less hotel, more beautifully-kept home; one belonging to someone an appreciation for stillness, + a deep love for the power of each tiny detail.

Inside, the air is perfumed with fresh blooms + polished wood; velvet armchairs sit quietly in corners; sunlight plays across the collections of local art + books that line the shelves. It’s the kind of place that instantly slows your breath, where time stretches out just enough to remind you to look around, to be in the moment, to stay a little while longer. The hotel’s residents-only policy lends itself to a gentle, quieter energy too. When we stay, we love to take our time + walk into town for dinner or simply to take in the city. Our recent stay saw us catching up with dear friends in town before strolling home again, where sleep felt like a cherished ritual — deep in that way a night in a hotel always seems to invite.

The rooms are spacious + stylish. Beyond the consistency of big, beautiful baths + welcoming beds to fall into, there’s a sense that every room at The Wilder has been designed with thought rather than formula, each a reflection of the space’s original architecture, with gentle nods to the building’s Victorian past. It’s quietly luxurious in the most authentic way.

Breakfast is pretty wonderful here too. Served in a sunlit room that opens onto the garden, it’s all Irish greens + early light. Like most moments here, it’s the kind of breakfast that makes you linger: flaky pastries, local honey, poached eggs done just right. The coffee is strong, the conversation gentle. I love mornings like that — unhurried + rooted in simplicity.

What sets The Wilder apart isn’t extravagance but intimacy. It’s the sense that someone — an actual real person — has anticipated your need for quiet before you even realised it yourself. It’s the soft presence of the staff who never hover, the way the windows frame the age old trees outside, the balance between heritage charm + contemporary ease. Staying here feels like stepping into Dublin’s more secret rhythm — elegant, grounded, effortlessly classic. There’s no rushing but rather a feeling of calm that follows you out the door, down along the canal during your morning walk as you realise your stay has quietly reignited a new sense of vitality within as you step back into the pulse of the city + life itself.

For me, The Wilder is one of those places that lingers — not because it shouts the loudest, but because it whispers so eloquently. It’s where you go to exhale, to reconnect with the quieter side of Dublin, a deeper side of yourself + to be reminded that luxury is as much about how a place makes you feel as what it looks like.

London, in all its brilliance, never really stops evolving — its rhythm, its flavour, its way of reinventing the familiar. Just when you think you’ve found your places, the city reveals a few more, sometimes fully new or just new to you — tucked behind leafy streets, down glowing side alleys, or within quietly humming neighbourhoods that feel both new + nostalgic. As an extension, this is a second edition of my first guide of Essential Dining; The London Edition + is exactly that: an extended exploration of the spaces that continue to shape my love affair with the city’s dining scene each time I’m there. From soulful kitchens where heritage meets heart to modern classics rewriting the rules of comfort, these are the restaurants that linger long after you’ve left the table — each one its own little love letter to London’s endless appetite for beauty, flavour + story.

JIKONI

Ravinder Bhogal’s “no-borders kitchen” is a love letter to heritage + home. Influenced by the flavours of East Africa, India + the Middle East, Jikoni is warm, soulful, + deeply personal — a place that reminds you food is about connection as much as taste. It’s comfort elevated — storytelling through spice, memory + care. Bhogal was one of the first chefs in London to introduce a true fusion of migrant cuisines, rooted in emotion rather than trend. The restaurant’s feminine energy + textured interiors reflect her approach — heartfelt, nurturing, + quietly radical. CARLOTTA

Big Mamma’s Marylebone outpost brings Italian-American glamour to London in signature style — think plush interiors, red velvet, + unapologetic indulgence. A dinner here is less a meal, more a mood; playful, sexy, + made for evenings that unfold slowly. It’s pure theatre — deliciously over-the-top in all the right ways. From the same group that gave us Ave Mario and Gloria, Carlotta channels 1980s New York glitz with a dose of Italian drama. Oversized martinis, glossy pasta, + a soundtrack that practically insists you stay for dessert — it’s all perfectly, intentionally extra.

Yotam Ottolenghi’s Soho restaurant is where texture, colour + flavour collide. Each plate feels like a work of art — layered, vibrant, yet entirely grounded in fresh produce. Elegant without being fussy, NOPI is that rare balance of sophistication + soul — a restaurant that somehow still feels intimate, even in the heart of Soho. Known for its communal marble tables + impeccably composed vegetable dishes, NOPI embodies Ottolenghi’s signature celebration of abundance. It’s also one of the few places where you’ll genuinely leave inspired to cook again — the flavours linger, as does the joy.

OPSO

(I usually get better photos but this one is all I got. BEST scrambled egg ever I will say).. Modern Greek dining gets a London twist at this Marylebone favourite. OPSO — meaning “a delectable morsel” — serves up fresh Mediterranean fare with creative flair. Bright, social, + beautifully designed, it’s ideal for long lunches that stretch gently into evening + the feeling of being somewhere that could just as easily be Athens. Founded by the team behind Athens’ Michelin-starred Funky Gourmet, OPSO bridges classic Greek hospitality with cosmopolitan London energy. Expect taramasalata that could convert the unconverted, refined meze, + an atmosphere that somehow balances refined and relaxed all at once.

Down on Portobello Road, Canteen hums with the easy rhythm of West London life. Italian-leaning plates meet a buzzy, communal atmosphere — all energy, laughter + excellent food. The sort of place where a casual lunch can stretch into golden-hour drinks + the conversation always feels good. From the team behind The Pelican and The Hero, two of London’s most sought-after pubs, Canteen carries that same effortlessly cool, convivial spirit but with a little more polish. Expect comforting pastas, robust flavours + a neighbourhood crowd that feels like they’ve known each other for years.

In the heart of Notting Hill, ACRE is Thomas Straker’s ode to simple food done beautifully. It’s the kind of spot that feels familiar yet quietly elevated — where local produce + casual elegance meet in harmony. Think sunlit breakfasts, rustic lunches, + unfussy dinners that celebrate real flavour + the art of uncomplicated cooking. There’s an honesty to the menu — a confidence in letting ingredients speak for themselves. Having cut his teeth in some of London’s best kitchens before going viral for his butter recipes, Straker’s return to restaurant form feels refreshingly grounded, with a distinctly local soul.

THE RIVER CAFE

Few places define London dining quite like The River Café. Perched along the Thames in Hammersmith, it’s a masterclass in understated elegance — the kind that doesn’t need to shout to be unforgettable. Founded by Ruth Rogers + the late Rose Gray, it has long been a training ground for some of the city’s most celebrated chefs, from Jamie Oliver to Theo Randall. The food is simplicity at its finest: wood-fired, ingredient-led, deeply seasonal Italian cooking that somehow tastes like sunshine. But what makes it truly special is the feeling — the hum of conversation — think being seated next to Jemima Khan — the light dancing off the river, the sense that you’re part of something timeless. It’s more than a restaurant; it’s a piece of London’s soul.

Tucked away in Neal’s Yard, The Barbary feels like one of those secret London finds you only ever hear about through word of mouth. Inspired by the flavours + stories of the Barbary Coast — from North Africa through to the Mediterranean — it’s a space where smoke, spice + fire collide in the most beautiful way. The kitchen is open, the counter seating intimate, the energy magnetic. Every dish arrives with that slightly primal, flame-kissed depth that only true open-fire cooking delivers. It’s one of those places that’s hard to get into for good reason — small, buzzy, + full of heart — but absolutely worth the wait once you’re there.

A Special Date Night at Ballyfin

There’s something about the Irish countryside at dusk — that moment just before night folds in upon you, when everything feels suspended between stillness + the mystery of yet-to-be-discovered stories; especially when it’s date night at Ballyfin. We left Kildare as the sky began to soften, the 50-minute drive just long enough to let the day dissolve into something slower. By the time we turned into Ballyfin’s gates, the world had hushed entirely.

An inaugural visit for us both, the estate reveals itself gradually — the lake glimmering beyond the trees, the grand façade of the house emerging like a secret you’re being let in on. There’s a sense of exclusivity to Ballyfin that doesn’t feel pretentious, just quietly assured. And while we weren’t checking in for an overnight, perhaps that’s what makes even simply dining there feel so special: you’re not merely going out for dinner, you’re stepping into a chapter of Irish history.

Inside, time seems to stretch you back to a grander era. Gilded mirrors, sweeping staircases, the kind of art + architecture that even in their unshakable presence, whisper rather than declare. We were shown around at first + enjoyed a beautiful cocktail by the fire before being taken to our table in the State Dining Room, where candlelight reflected off the polished mahogany + golden frames — a setting that could easily have overwhelmed, yet somehow didn’t. Everything at Ballyfin feels curated to a calm hum.

Dinner unfolded at an unhurried pace — each course beautifully balanced, elegant without over-rehearsal or complication. Irish produce given its due respect: earthy, refined, deeply satisfying.

It’s worth pausing for a moment on what was on the table + who’s pulling the strings behind it. The kitchen at Ballyfin is led by Richard Picard-Edwards, who joined the estate in April 2023, bringing with him a background in Michelin-starred kitchens in the UK. Under his hand, the menu leans into seasonal Irish ingredients — some of which come straight from Ballyfin’s own walled kitchen gardens — while retaining a classical, refined technique. What made the evening even more special was how the setting + service echoed the cuisine. We weren’t rushed; the pace allowed us to savour the food, the table, the conversation. That sense of “guest” rather than “diner” was everywhere — even in the simplest of touches, like the way the staff described the provenance of the butter on our table (from a Cork farm). In short, the meal felt like a carefully crafted narrative of this place — the house, the gardens, the land, the kitchen. It felt like more than “just dinner.”

After our dining experience, we found ourselves chatting with John, the night porter, who has been part of Ballyfin’s chronicles since the very beginning of its current rendition (if I remember correctly, 28 years). He told us how the house, once a private residence built in the 1820s for Sir Charles Coote, later became a Patrician Brothers’ school before being lovingly restored to its former grandeur by American owners Fred + Kay Krehbiel, who poured their hearts + souls into ensuring every detail was executed with perfect precision. John spoke with a beautiful sort of quiet pride — not the kind of overly rehearsed hospitality you often meet in equally exclusive hotels, but that gentle, genuine Irish storytelling that invites you in for a chat. He told us of the restoration that took nearly a decade, of the treasures discovered behind plaster walls, + of the Krehbiels’ deep love for preserving not just the house, but its spirit. His words made the walls feel alive — history layered with care, not performance or polish.

Later, as we stepped outside into the night, the façade of Ballyfin glowed in the soft amber of the lanterns. The lake shimmered in the distance, + for a moment, I felt suspended in time — between the glow of having had such an exquisite evening + the desire for it to last through the night. It was the kind of evening that reminds you why connection — to place, to history, to each other — really matters.

There was a sweetness to the simplicity of it all: just 50 minutes from home (just over an hour if travelling from Dublin), yet it felt as though we’d travelled far beyond the ordinary. Driving back through the quiet countryside, I couldn’t help but feel that Ballyfin doesn’t just host you — it holds you, for a moment, inside its story. + with that, you hold it forever a little too.

Sri Lanka; An Immersive Ayurveda Healing Experience

For reasons — so many reasons — I will one day share more in-depth about, I recently found myself checking in to an Ayurveda resort in Sri Lanka for a month. With a nervous system under severe tension + pressure from years of, to put it simply, just not being ok, it was time to do something intensive to catch my breath again as I found my health declining, my body in shut down. I’d been doing all my usual things at home, I was exercising, eating well, journalling.. all the things. But nothing was sticking, nothing seemed to allow me any sort of real space to breathe. I was drowning. Again. A placeI’d been before. In reality, I was burned out at my very core this time. It was beyond me. I wasn’t functioning in my day to day of life + from years of acute strain internally, my body was beginning to break down in ways I’d not experienced as of yet in all the years of working hard to survive the debilitating depths of depression. As my systems were shutting down, I knew it was time to look at things from another perspective.

With just five days before I departed, I booked into a specific destination that specialises in Ayurvedic healing. My first time in Sri Lanka, it was an initiation of sorts into this immersive world of health spas. I’d subliminally known of this ancient way of practicing medicine for years but really I just knew of it in that I practice yoga + had done a few sessions with a practitioner at home here in Ireland a long time ago. I’ve long been interested in + live my life from a place of valuing the unconventional. I guess the norm + don’t just settle for blanket answers around my health. Little did I know though of how deep this all natural, all grounding method is.

Ayurveda is a 6,000 year old belief system rooted in the view that every person’s health depends on maintaining a unique + highly personalised equilibrium of the three biological forces which Ayurveda categorises as vata (movement), pitta (metabolism) + kapha (structure) — which govern all bodily functions from digestion to cellular repair. The system of healing stems from the fact that true health arises from living in harmony with nature’s rhythms, balancing the three doshas — vata, pitta + kapha — to align body, mind + spirit.

Focusing on healing the body as the first port of call when I landed was something of a major shift in my healing. Most of the work throughout the many years I’ve been trying various approaches, was almost always trying to alter my mind, to work on changing my thinking. And it has it’s place for sure but too much talk therapy — or talk therapy in isolation — for me, lost it’s effect pretty quickly as there’s only so much you can work on with from a place of thinking alone. Admittedly, I am just one person but in my personal experience, it’s been a lot of trapped trauma at a very somatic level that has been keeping me stuck in loops of survival. Trauma, that long ago embedded itself into the cells, subconsciousness + nervous system of my body, that forced me into a place of fight, flight or freeze over years + has had a detrimental effect on the body + mind.

With my Ayurvedic immersion, there was no talking. And unsurprisingly it’s exactly where things really began to shift. I began to see shifts I once couldn’t even have dreamed of. For the first week, I could barely keep my eyes open. And to the naked eye I’m what looks like a healthy 36 year old woman but from how unwell I was feeling the exhaustion that lived in my cells — that I’d long tried to deny + hide — finally had permission to be felt. My body wasn’t tired from doing too much, it was tired from being in overdrive for far too long. It was the fatigue of carrying myself through years of survival that finally had a place to exist + with it, I felt like I collapsed literally + figuratively in body, mind + soul.

The way I’d describe the spirit of a place like this is almost impossible to put into words. Think White Lotus but less Four Seasons with a generous presence of monastic energy. The rhythm is slow, deliberate. It’s conscious + patient in its knowing that all healing takes time. There’s a strong respect of the power of being in the moment. Mornings began with warm water to awaken the digestive system, followed by 6am yoga as the sun rises over the Indian Ocean. Then there are the daily treatments: the soft drip of warm medicated oils down the forehead, daily Accupuncture + long rhythmic massages that seem to melt memory from the muscles. The kind of massages that aren’t simply a luxury but a necessity in aiding the movement of all that’s become blocked + stagnant. It’s medicinal + instinctively wise in it’s knowing of what the body needs, guiding it back to a sort of equilibrium no therapy room has ever afforded me.

The food in a place like this can only be described as curative. It’s presence in each day is never about counting calories or being strict with your macro ratio. It’s so much deeper, so much more nourishing. The gentle structure of dosha-balancing meals which focus on the healing properties of an ingredient are simple, healing, + always cooked with intention. Never restrictive either — which might often be typical of a “health spa”, everything is designed to return the body to balance, to help one remember what peace feels like in the body as a lived experience instead of what one might think it should feel like. There’s a strong focus on warming foods. Even in the 35 degree heat + a humidity that had me embracing my Monica-in-Hawaii level of frizz for the month. Like the treatments + herbal medicines, food is undoubtedly a pillar of the process, its presence highly intentional, deeply supportive.

There were no phones at the dining tables. And it’s encouraged to step away from the outside world. Reading, journalling, being encouraged over scrolling, comparing. The shoulds of regular scheduling feel replaced with presence. With being. It’s kind of what you imagine a health resort or spa to be, people are quietly on their own path, there’s little chat, no rush to fill silences, no external noise. Just stillness, + the deep reckoning that comes when you finally stop running from yourself. In contrast to the typical scene lived out in doctors offices, here my doctor didn’t ask me to explain why I was unwell, what I was feeling or thinking, it didn’t seem to have much bearing on the plan or the sense of ego found in Western medicine. My doctor wasn’t trying, actually at all, to prove anything to me as her quiet knowing of how the process works was so deeply embedded in the philosophy of everything they do. They simply observed, listened, + prescribed rituals that worked with my constitution rather than against it. It was medicine that met me where I was, not where I was trying to be or where I was coming from.

Over time, with each day + each treatment, I began to notice subtle yet powerful changes. My digestion softened. My sleep deepened. My breath returned to a steadier rhythm. While deeply individualised, the process is steeped in traditions + specific sequences that simply work. No analysis of your past, no rehashing of the pain you once thought would hold you hostage forever. More than anything, my inner dialogue began to quieten + soften — that relentless hum of self-critique + need for control that had disguised itself as discipline for so many years. I even took off my Oura ring — a quiet act of surrender, a step toward a more lived experience of my body instead of data telling me what to feel. And I’m still living that now, back home.

Over the weeks, Ayurveda taught me that healing is not about fixing what’s broken, but about remembering what has always been whole. In fact it doesn’t considered anything to be broken. It rather speaks to that which needs to be remembered. It’s not about “doing” healing; it’s about allowing it unfold in how it naturally knows how when we simply step out of the way. And out of our heads. Away from the overthinking. It is based on allowing the body guide you home.

As someone with a deep history of hating my body too + always living from a place of working against it, there’s a deep humility that arrives when you begin to see your self + your body not as a project to perfect, but as a companion to care for. To begin to befriend yourself, your. body as the home you will forever be housed in in this lifetime. The power of this place is in learning to slow down, to nourish instead of punish, to listen instead of override at any cost. I found something I didn’t know I’d lost, something I’d ignored for too long: reverence.

As I settle back home into life after this incredibly immersive experience, I realise that the truest transformation isn’t loud. I see in real time that that healing often takes hold in is the invisible. It doesn’t demand evidence or applause. It’s quiet, steady, cellular. The kind that reorganises you from the inside out. Healing, I’ve learned, is less about becoming someone new + more about finally making peace with yourself — body, mind + spirit — as one.

 

From Off-Grid to On-Point: The World of AKYN

When Amy Powney — after nearly two decades as creative director at Mother of Pearl — chose to step into something of her own, she didn’t just launch a label; she launched something of a manifesto. AKYN is just that, a contemporary womenswear embedded in integrity, heightened by detail. Moving beyond the lure of trends + turnover, it is centred on integrity, craft, + purpose.

Growing up off-grid on a farm in rural Lancashire, without electricity, running water, or material excess, Powney developed an early reverence for nature + its simplicity along with the intelligent power it possesses when lived amid a world of excess + intemperance. That upbringing is now the very soil from which AKYN grows: a brand committed to transparency, regenerative materials, + ethical traceability, not forgetting the value held in, similarly to nature, it’s timelessness + grace.

No stranger to challenging the system, at Mother of Pearl, Powney launched No Frills, a fully transparent, sustainably made line using organic materials + radical supply‑chain honesty. Her journey + struggles were documented in Fashion Reimagined, + in 2024 she delivered a TED talk titled How to Fix Fashion and Protect the Planet. Now though, with AKYN, Amy is doing what she’s always tried to do — but freer + with her own unlimited vision. She’s quietly radical in all that she does: eschewing fashion week spectacle, focusing instead on material integrity — think organic/regenerative cotton, flax, hemp, certified wool, TENCEL™, as she forges a traceable, purpose-driven path in an industry fraught with greenwashing . At its heart, AKYN is minimalism that breathes, it is alive. Never boring, it’s clean silhouettes, refined fabrics, + quiet gestures of distinction possess an energy often eliminated by other minimalist aesthetics. Here, simplicity doesn’t feel empty — it feels intentional. You could say there is a quiet optimism behind AKYN: that fashion can be beautiful + responsible, yet you won’t find preachy slogans — just soft statements (like subtle embroidery or a “Soil not oil” thread) + design that feels considered down to the finest of seams.

In designing AKYN, Powney carries her past with her — her love of minimalism, the silences beyond noise, the activism beyond slogans — asking of her customer + her longterm admirers to believe that responsible fashion doesn’t need to shout. It simply needs to be made better. Designed with intention. And in what AKYn offers the world, it affords us the invitation that in wearing it, you become part of that story.

If Mother of Pearl was where Powney honed her convictions and craft, AKYN is where she distills them. This is a new language of dressing—one where elegance meets earth, where clothes don’t just adorn but resonate, and where a wardrobe becomes a quiet locus of belief and beauty.

Nosara, Costa Rica; A Blue Zone Pilgrimage

Tucked gently along Costa Rica’s Nicoya Peninsula, Nosara feels less like a destination + more like a state of mind. Here, life slows to a rhythmic flow dictated by the tides, the rustle of palm trees, + a whole myriad of bugs who take on more of a heard-but-not-seen presence. Known as one of the world's five Blue Zones — pockets of land + specific space in Italy, Greece, California, Japan + here in Costa Rica where centenarians live not just longer, but more vibrantly — Nosara offers more than just idyllic beaches or world-class surf, it extends to those who journey this far, a way of feeling truly connected.

There’s a particular kind of luxury that defines this place. And truthfully, upfront, it’s not quite as inexpensive as one might expect, given that it’s geared toward a more Western clientele who have found their way here in recent years. Think a lot of tech-bro-billionaire-living-his-best-surfer-life-post-being-aquired energy. Yet, it’s not so showy or manufactured either. The luxury for me, in my very much NOT tech-bro-billionaire-living-his-best-surfer-life-post-being-aquired era, lies in the natural cadence + values Nosara so naturally exhibits from the ground up. The luxury is discovered in the understated beauty of waking with the sun, of barefoot walks to morning yoga or a grounding practice with a front row seat to some of Mother Nature’s greatest manifestations of beauty. It’s the kind of rugged luxury maybe not all seek but for those who find bliss in nourishing yourself with food grown within arm’s reach of the jungle + a type of fresh air that brightens your eyes + flushes out your lungs, Nosara is luxury personified. It’s the deep, almost cellular knowing that wellness isn’t an appointment to squeeze in while on a call while running between meetings. It’s what’s found in places like Nosara, right here amid the jungle, by the sea. It’s what’s found in the simple, the natural, somewhat unspoken foundation of everything this land offers.

Nosara has long drawn a soulful mix of surfers, yogis, creatives + seekers — those craving something a little more elemental, a little less prescribed or excessively obvious. The dirt roads remain mostly unpaved, a conscious decision to keep the pace + scale slow, the spirit grounded + steady. Wifi may flicker (in fact it most definitely will), power outages occur (regularly), + schedules may blur but that's all part of the point. Here, you don't just visit to tick it off the list of cool places to see in the world — it’s more than that, you soften, you return to yourself a little more deeply. Nosara has a spirit that embeds itself in you, offering you something new within to take home. It’s something to become somehow.

I travelled here with one of my most beautiful friends; a first time in this idyllic part of the world for us both. We travelled the long distance to attend a retreat of another dear friend Camilla who’s philosophy + method, The Practice, I fell in love with while on honeymoon in Stockholm some years ago. Camilla has spent a lot of time in Nosara over the years so we were like locals as she guided us into the depths of it’s magnificence, sharing the best spots to eat, surf, yoga, + bliss out. We discovered wellness practices typically unavailable or often shut down by Big Pharma back home. We got to have the best massages by locals who work with the body in unbelievable ways + of course practice (pun intended) The Practice each day.

Whether it’s sunrise meditation at a cliffside shala, afternoons spent weaving through boutique shops, or long, salty dinners under the stars, Nosara offers a life measured not in checklists, but in moments. Those sacred, simple, beautifully unhurried. Moments that remain memories long after you return home.

Sendero Hotel — This is where we stayed, + I’d go back in a heartbeat. In fact it felt near impossible to leave. Tucked near the main surf break, it’s effortlessly elegant. Think earthy luxury done just right. Clean lines, natural textures, + a feeling of space to unwind. Morning coffee by the pool, the soft soundtrack of howler monkeys in the background, the scent of salt + suncream in the air. Sendero is heaven on earth // Harmony Hotel — A Nosara icon. It’s more than a hotel — it’s an age old philosophy. We didn’t stay here but the smoothie bar is reason enough to drop by, along with the chicest little book store La tiendita (our little store). The property is lush, calm, + grounded in sustainability with owners John Johnson + Susan Short’s focus on investing their love + efforts into nurturing the heart of Nosara. A little older, a little wiser , it’s like your barefoot jungle guide with great skin who’s been around for long enough to know what’s really cool // ESH Hotel — Modern, minimal, quietly luxe. We stayed here as well + loved the intimate feel. A true boutique gem, hidden amid the trees of the jungle just enough to feel private but still within reach of it all. Think low-slung architecture, soulful design, + the best outdoor showers. I loved early morning yoga with Dominique here too, her energy to help you start the day is just pure bliss.

Where to Eat

Nosara nourishes, deeply. Everything is fresh, local, full of life — and the scene is as relaxed as it is refined.

Sendero Kitchen — Our favourite. Full stop. It’s unbelievably good we repeated here a little too much to admit. The menu dances between tropical vibrancy + thoughtful comfort. Cocktails at dusk, the scent of wood smoke, a sky slowly slipping into stars // Organico + their Bakery — Your daily ritual. Coffee, fresh bread, coconut yogurt, turmeric tonics — the kind of place that makes you feel both healthy + held. Think mini Erewhon of Nosara // Smoothie Bar at Harmony Hotel — An institution. Order a Green Goddess or the Cacao Mint smoothie. Sit under the palms and let time melt. This little nook is such a fun spot to let the day move beyond you as you people watch + overhear some weird + wonderful conversations from all over the world // La Luna — This is pure beachside magic. Mediterranean-Costa Rican fusion, laid-back glamour, + a front-row seat to some of the most incredible sunsets I’ve bared witness to. Stay a while. Order everything. We sure did // Howler’s Beach Lounge — Classic surfer café, here it’s all about the sand underfoot + the surfers that live here post the waves. Its casual cool, smoothie bowls + good vibes // Coyol — Off the beaten track, elevated jungle dining under the stars. Book ahead. Go hungry. This is one of the most elevated dinning experiences Nosara has on offer // Destiny Café — Bright, airy, + plant-forward. Perfect for a post-yoga brunch // Naked Foods — Clean, vibrant, intuitive cooking. You can feel the love in every bite.

What to Do

Chorotegas Surf School — Whether it’s your first wave or your fiftieth, this school gets it right. Thoughtful, patient instructors, + that dreamy Nosara swell. The team here, as part of Sendero Hotel, are just amazing. // Yoga at Bodhi Tree — One of the most beautiful yoga spaces I’ve ever moved in. Jungle on all sides, elevated wooden shala, breathwork that lingers // Book a Retreat at Blue Spirit — If you're craving deeper transformation, Blue Spirit hosts some of the world’s best teachers + thinkers. You can only access this as a retreat attendee but the list of incredible movers + shakers in the wellness world is pretty epic to check out as often, whoever is in town will be doing a talk or workshop elsewhere // Wellness Day at TIERRA ENCANTADA — Don’t miss this. Spend a day with Ann, a true angel on earth — massage, healing treatments, rituals tailored just for you. A portal to something divine right there in the trees // Massage at Harmony Hotel — Deeply intuitive bodywork in the heart of the jungle. Pure bliss // Talks + Workshops — Check local boards or ask around — Nosara is a magnet for health gurus, biohackers, + spiritual seekers. Essential Dining; The Dublin Edition I

Perhaps it happens people living in all cities that while discovering new places that blow you away in your own, you think.. wow you could be in *insert another city you consider chic AF*. Well this seems to have happened me a few times lately in Dublin while dining out. Taking in something that enveloped my senses right here on my doorstep, I was transported elsewhere - something I love + appreciate is where good food + great design works wonders in elevating the vibe of new experiences. And while, of course, I love my home city of Dublin, you sometimes can’t ignore that inner, well.. unintended snob, that comes alive when tricked into thinking you could be anywhere else.

So, yes Dublin has really been impressing me lately with hot spots where not only has the food most definitely been something to write home about but the vibes have been majorly on point too. A solid favourite (if three visits in two + a half weeks doesn’t scream obsessed I don’t know what does) is definitely ROW which, in my mind, gives New York, London and Paris a run for their money. The food is diviiiine.. like majorly wow + the atmosphere contests that of Raf’s in New York or perhaps The Barbary in London. Perfection in a nutshell.

ROW WINES

As I mentioned above, ROW is unmissable. The latest venture of Dublin’s renowned brother-duo, Marc + Conor Bereen, ROW is elevated beyond words with a self proclaimed mission to “capture the imagination of Dublin’s cultured, well-traveled food + wine aficionados”; something they do with utter perfection.

Beyond an incredible wine selection that makes organic the only way, the menu at ROW consists of 8 - 10 plates plus a smaller collection of snacks all with fresh Irish produce weaving it’s way throughout the experience. One of the (yes three) times I was at the restaurant recently was with two of my cousins, visiting from NY. We ordered the entire menu + without fail, each plate spoke to us collectively as “the best dining experience we’ve had in a while”. And that’s saying a lot for three girls who all recently went wild on dining out in Manhattan while I was visiting them there. TOP of my list.

LIATH

Tucked behind an unassuming door in Blackrock Market lies one of Dublin’s truest, most brilliant treasures — Liath. A two Michelin-starred sanctuary of flavour + feeling, dining here feels like stepping into a quiet dream, where every detail has been considered, but nothing feels forced. There’s an intimacy to the space — seating an exclusive 14 guests per sitting. A calm confidence quietly whispers as if the walls themselves are holding their breath in anticipation of the magic to come.

Chef Damien Grey doesn’t just cook — he tells a story. Each course arrives like a new chapter: delicate, surprising, full of feeling. The flavours are precise yet poetic, rooted in nature but reaching toward something far more ethereal. You find yourself slowing down, paying attention, letting the experience unfold at its own gentle rhythm.

It’s rare to find a place that strikes the balance between excellence + ease, but Liath does just that. It’s not just about what’s on the plate (though every bite is unforgettable) — it’s about the sense of being truly held, of being part of something quietly extraordinary.

ALLTA Bar

I’ve been lucky enough to experience all renditions of ALLTA, from it’s current representation in Grand Canal Docks + the original to it’s pop-up in Slane Castle as a most genius response to lockdown restrictions during COVID + the car park situation for their winter garden restaurant on the 5th floor of St Andrews carpark - each an energy of somewhere else entirely. Somewhere chic, elevated. And ALLTA Bar is no different thanks to the master of it all, Niall Davidson. An absolute must in it’s own right, it’s not just to be considered if you can’t get a booking in the main restaurant, this part of the ALLTA experience is wholly got it going on. Think amazing DJ sets - like the kind where Shazam is repeatedly open on my phone trying to capture everything, great bites + amazing cocktails - frankly I’m not a drinker so it’s the non-alcohol ones for me + they are ** chefs kiss ** perfection. Oh + the desserts are incredibly delightful, so uniquely put together with tastes you wouldn’t imagine possible. ALLTA itself deserves a spot here itself but I decided to give the place of love to it’s fun, cooler, younger sister which for me is always the energy I love in anything, the slightly cooler vibe.

Lena’s got that IYKYK kind of energy. Like a secret you’re lucky to know — Lena’s a candlelit haven tucked away in Portobello where time slows, wines flow, + the food lands like a deeply romantic love letter on the table.

There’s a mood here — low-lit, sultry, quietly confident. The menu is simple, Mediterranean-leaning, made for sharing. It’s an experience worth savouring. Crusty bread torn by hand, anchovies that melt, a glass of something natural + deep. Every element feels instinctive, unforced, yet flawlessly composed. Run by the same brilliant team behind Etto + Uno Mas, Lena carries that same quiet mastery — effortlessly cool, deeply considered, always delicious.

A night at Lena is more than dinner — it’s a moment. A feeling. A place that knows exactly what it is + invites you to simply sit back + enjoy the the moment at hand. Whatever you order, one is guaranteed divinity. And please, definitely do not skip the chocolate for dessert.

Tucked into the vibrant heart of Ranelagh, Parrilla radiates an energy that's infectious from the moment you walk through the door. This seriously hot + chic AF Mexican joint isn't about fancy, overthought dishes or energy; it's about bold flavours, good vibes + a shared love of great food. Whether you're digging into a plate of tacos al pastor or just sitting back with a perfectly tangy margarita, the mood at Parrilla is all about letting loose, being present + soaking up the moment. A place to go when you want a little more colour, a little more zest + a lot more fun in your night. It's the kind of place where tables are filled with laughter, where the warmth of the staff makes you feel like part of the family. The open kitchen adds to the buzz, with flames leaping as tacos sizzle on the grill, + the scent of spices floating through the air. It has firmly + quickly become one of my absolute favourites in the city. Period.

THE BUTCHERS GRILL

I verge very closely to admitting total (albeit, nothing to do with Irish catholic) shame in myself that it took me forever to get my ass to this Dublin classic. I think I just always considered it a red meat joint simply for those who enjoy a really luxe steak. However, despite the many meals I could’ve enjoyed here had I not been so I don’t really eat red meat, it was worth the wait. Every bite. I went with a friend who loves a great steak + of course it doesn’t disappoint on that front but beyond that for those like me, the other selections of fish options are phenomenal. From gammas + tuna tostados that will break your heart, I was that annoying person that kept saying.. wow, like wooooow at every new bite. I mean, I’m late to this party but hell I will be here till the end.

FISH SHOP

There’s something quietly poetic about Fish Shop. It doesn’t clamor for attention but rather simply invites you in, pours you a glass of white if you so wish, + then serves some of the freshest fish you’ll ever taste. Tucked into the cutest + microscopically teeny tiny space on Benburb Street — like think 10 - 12 seats max — Fish Shop is as intimate as it is unforgettable.

Having started as a pop-up in Blackrock Market in 2013, the team opened their permanent location in Smithfield in 2015 + have remained top of the fish game in Dublin. The menu is short, sharp, + entirely honest. Delicate oysters, perfectly fried hake, a crisp glass of something mineral. Everything is done with intention, nothing unnecessary. It’s the kind of spot that reminds you how beautiful simplicity can be when it’s rooted in quality + care. We love love lovedddd the crabfish on toast to start, followed by some of the best classic fish + chips you’ll find in a city that knows what down in the fish + chips department. Go for the plaice, it’s divinely served.

There’s no theatre at Fish Shop, no flash, no performance — just warmth, flavour, + the kind of understated charm that makes you want to come back before you’ve even left.

ORWELL ROAD

Ok, this one is another brainchild of Marc + Conor Bereen. ORWELL ROAD. Somewhere that had been on my list for quite some time, my Husband + I went on a date night here + loved it from beginning to end. Another place where it’s more than just great food, the atmosphere is intimate with an attention to detail that really shows in absolutely everything at ORWELL ROAD. A in saying that, in everything the Breen’s bring to life. One of the main focuses of the food is around sustainable sourcing which emphasises incredible Irish ingredients that, when brought together by head chef Daniel Hannigan, generate the essence of truly incredible dining without the fuss of the fine dining formalities. A delight in every way.

NOTE

One of the things I love most about going out for dinner is the idea of discovering new things, especially the vibe. I love somewhere where small/er plates are on point + the opportunity to taste + experience different dishes is on the cards. NOTE is just that. And then some. Energetic at it’s core, yet equally understated with a touch of European cool, this wine bar come bistro - super retro cool for Dublin - is a really sleek place for a date night or a long evening of slow eating enjoyed with friends. The food at NOTE is Mediterranean by nature with a menu of dishes bold + confident, leaving you considering ordering just about everything. The staff are so knowledgable, friendly + efficient which brought together with NOTE’s incredibly tasty food, a wine list worth it’s weight in gold + the perfect amount of retro vibes, is worth considering this your cue to book your table immediately..

Since it’s opening in 2013, ETTO has remained top of all the lists as one of Dublin’s best restaurants. It’s been one of those that when anyone asks me, I recommend without a second of thought. A tiny sweet premises on Merrion Row ETTO has been ahead of the trend when it comes to small plates + a relaxed yet elevated dining experience since before it was cool to do something so “off “ the beaten track. With an emphasis on seasonal locally sourced ingredients, the menu is a delight for those who enjoy contemporary cooking in a manner of grazing a perfect selection of small plates or if you’re feeling it, the full-on cote de boeuf experience. Every time I’ve been to ETTO, I can’t help but fall in love with it a little more + can see just why this award-winning eatery remains top of the IYKYK list!

From the team behind one of Dublin’s most beloved culinary experiences, Forest Avenue, forêt is their newest expression of magic — a French bistro that captures everything they do so well: beauty, ease, soul. And truly amazing food. forêt is the kind of place that doesn’t shout for attention but lingers in your mind long after you’ve left.

There’s a subtle elegance to it all — thoughtful plates that feel both classic + fresh, pared-back interiors, the hum of conversation rising gently above the clink of cutlery. The menu leans French, yes, but it’s also unmistakably them — precise, seasonal, full of feeling.

Whether you’re settling in for a long lunch or slipping in for something simple + perfect, forêt holds space for it all — unfussy, unforgettable, utterly divine.

AMY AUSTIN is the perfect amount cool paired with ample amounts of sh*t-hot-not-to-be-missed wine bar + restaurant to add to your Dublin hit-list!! The ideal little spot to get some time with your girl over some delicious small plates + a really great glass of wine, it’s got that European aura down to a tee. Casual on the fashionable side, AMY AUSTIN is splendidly intimate with capacity for just 30, loud but vibe-y music that brings the atmosphere of sassy sophistication to life + a menu that in ordering jut the right amount leaves you with a yearning to return pronto. Again, another place where the staff are incredibly helpful + friendly, it’s mission to burst with energy at every level is achieved with sheer we-re-not-even-trying-to-be-this-cool excellence. Loved a summer evening here with a friend + absolutely recommend.

Very much an elevated execution of it’s original take, COPPINGER is most definitely a must for all + any occasion. Masterfully balancing a highly stylish energy with culinary excellence, the recently revamped restaurant is a perfect spot for a casual bistro-cool lunch or a more in-depth date night dinner. Offering a mix of Mediterranean-inspired small plates along with heartier mains, it’s an obvious creation of the Breen brothers (who’s other spots on this list include ROW + Orwell Road) yet in their ever evolving expansion of their pristine brand. Unique yet classic, I really loved a work lunch here recently + absolutely recommend for whatever the occasion. A brilliant one that impresses beyond it’s well-known previous self.

Bistro charm meets stylish clientele, and if weather permits, grab an outdoor table + indulge in their famed Cajun chicken — a personal favorite // Atla (NoHo) Atla embodies that cool downtown vibe with fresh, modern Mexican fare served in a minimalist setting. The Lowell (Upper East Side) Sumptuous + radiating boutique energy, The Lowell is the epitome of quiet luxury and easily one of my personal favorites. Sublime, Comporta; A Portuguese Dream

If you’re seeking a serene escape from the everyday, one beautifully immersed in nature + surrounded by peace, Comporta could be your next retreat from it all. Nestled along the stunning Atlantic coastline, the tranquil coastal village in Portugal, renowned for its untouched natural beauty + relaxed, bohemian vibe is on the verge of becoming one of the next once hidden gems to be transformed by the demands + desires of tourists seeking something previously untouched + pristinely charming.

The region, about an hours drive from Lisbon, is distinguished by its sprawling rice paddies, immaculate dunes, + endless stretches of immaculate golden beaches that seem to stretch on forever. Framed from the West by the deep + authoritative immense blue of the Atlantic, it’s unspoiled landscape creates the perfect get away for those who love the type of escape that not only allows for but encourages a full unwind.

We visited late May to early June; a birthday surprise from my husband upon which he caught me off guard with a stay at Sublime Comporta, a retreat that had been high on my wish-list since it’s opening in 2014 when it was just a small rural boutique. A wish-list hotel for good reason, Sublime is a destination in + of itself that literally doesn’t require you to leave for anything once you arrive in the exquisiteness of it’s perimeters. Exceeding our expectations by a mile, to explain it were it to possess it’s own personality, Sublime is that of a nonconformist, the cool younger sister who, considered rebellious + disruptive, swopped college for a life of travel without the guarantee of a secure job so as to follow her own dreams doing something cool + off the beaten track + who now, well guess what, is the one having the best time while people seek to mirror her every move + escape their ‘guaranteed’ conformist lives.

Amid all the cool, the true essence of Sublime is that it’s as respectful of its surrounds as one could be while also being incredibly chic. As natural as it remains, chic definitely leads the way here as it’s every element is considered, curated + polished for those who understand how design plays such an integral role in the way we feel in any environment. it is that personified. The interiors combine a minimalist founding with the warmth of something very personal, cultivating a sense of peace + a sort of familiarity one can only really sene when home. As part of it's unintentional cool, Sublime embraces a truthful practice of sustainable living, from the eco-friendly materials used in its construction to the local produce served at every meal + it’s clear it was built with a deep respect for, not only the land, but also the community upon which is lays.

We took finding peace quite seriously while there; taking full advantage of the the amenities available that all but spoke to us as a couple; working out in the beautiful gym with classes outside on the rooftop space, playing tennis + taking walks + long cycles in the grounds. A treatment in the spa with Ground, the Irish well-being brand I’ve loved since it began + founded by my darling friend Peigin Crowley in Cork + am so proud to see leading the treatment menu as the main collection of products on offer. Later, we would sit among one of the many spaces available within which to read, write, do some work on our laptops or simply just be. It’s a place like no other to find yourself simply being. We left the property just a few times, once of great note was to attend dinner in Xtian for my birthday. Xtian is the restaurant in Vermelho Hotel, the luxury boutique hotel just a short drive away in nearby Melides designed + owned by Christian Louboutin which was such a special evening + somewhere we’re return to without a second of hesitation.

Needless to say, we really could have extended our stay + would have in a heartbeat but as life called us back to the road, it was clear that upon leaving we departed with a knowing that Sublime + this part of the world would become one of our places, one filled with peaceful memories + so much space for the making of so many more.

Checking In; Cashel Palace

There’s a profound stillness to Tipperary that gets under your skin — in the most beautiful, soul-soothing way. Nestled within its energy, where ancient Irish history lives + breathes, sits Cashel Palace. A place that feels less like checking into a hotel + more like slipping quietly into another rhythm, another way of living. If even just for a few days.

Driving into Cashel town, the first glimpse of the infamous Rock — dramatic + unwavering — captures the attention. It’s humbling. Sacred. And just a stone’s throw away, the red-bricked façade of Cashel Palace rises like a quiet promise of settling in. You feel it before you even step through the doors: this is where you’re invited to pause, exhale, reconnect.

Originally built in 1732 for the Archbishops of Cashel, the house has been beautifully reimagined to a former glory. But somehow better; it’s restored with reverence, not literal reinvention. The recent renovation, overseen by the Magnier family of Coolmore Stud fame, was a meticulous labour of love. Susan Magnier led the interiors, collaborating with London-based designer Emma Pearson + Smallwood Architects to blend historic charm + modern luxury.

Inside, the narrative informs of elegance without pretension. Grand but grounded. Our room — airy, golden-lit, with windows that opened out back towards the Rock — felt cocoon-like. Every detail considered. Rich textures, natural tones, softening like a cosy blanket. Sleep hits differently here. It seem dreamless, entirely encapsulating. Maybe thanks to the good country air or perhaps the grandeur of one’s surrounds.

Days unfolded gently. Mornings begin with slow breakfasts — poached eggs, the kind of warm Irish brown bread of dreamy childhoods, butter that tastes like actual summer fields. There’s something about eating here that’s both deeply comforting + quietly celebratory. Truly Irish yet entirely elevated. The Bishop’s Buttery, all candlelight + vaulted ceilings, is a symphony of local produce. Each plate a nod to Irish heritage — refined, yet full of heart. And just across the courtyard, Mikey Ryan’s offered a different pace: cosy, convivial, full of character. The kind of place you settle into without checking the time.

The spa became our sanctuary. A long, glassy pool that stretches from inside to the outdoors, it’s dreaminess lit up by the sky. Outdoor seaweed baths. Treatments that felt like rituals. I floated, I steamed, I let go. We both did. Lost in time + a good book, it’s a space designed not just to pamper, but to heal. To realign.

But it was in the in-between moments —wandering the gardens in the golden hour, watching the shadows change on the ancient stones of the Rock, which you can walk right up to — that something shifts. There’s magic here. Not the loud kind. The quiet, ancient, rooted, Irish kind that stays with you long after you leave.

Cashel Palace doesn’t demand anything of you. It simply offers itself—gracefully, generously — as a place to come home to to. And in a world that so often pulls us in every direction, that feels like the rarest luxury of all.

 

Essential Dining; The London Edition

London is so unbelievably vast + deeply diverse, full of endless exploration + the open possibility of newness. It’s what makes the city so exciting + full of cultural depth. Within that, restaurants are plentiful - to say the least - spanning each neighbourhood + area that make the city so enriching as a visitor. Personally though, there are some that stand the test of time + those, that upon experiencing, stay with you for a long time. Cafe Cecilia is that for me, perhaps because it was where my Mum + I went for one of our lunches on the trip she came on to collect my wedding dress with me. And perhaps too because it was the best damn artichoke I’ve ever had. Starting there, let me take you through my favourite London spots..

CAFE CECILIA

Headed up byIrish chef Max Rocha, Cafe Cecilia is not just a homage to home but distinctly feel like a home from home. It is one of those rare gems in London that feels both effortlessly stylish + invitingly warm. Nestled in the heart of Hackney, it strikes the perfect balance between a contemporary setting + a welcoming atmosphere. The space itself is simple yet thoughtfully designed, with soft lighting, modern furnishings, + an air of calm that instantly makes you feel at ease. But it’s the food that truly sets it apart along with the energy it exudes. Each dish feels like it’s been crafted with care + genuine love of the creative process, using the freshest ingredients. When I was there, the artichoke was an absolute standout. It’s hands down the best I’ve ever had—perfectly prepared, flavorful, + with just the right touch of seasoning. Whether you're there for a casual lunch or a more intimate dining experience, Cafe Cecilia delivers both in taste + atmosphere, leaving you wanting to return again + again.

MOUNT STREET RESTAURANT

Mount Street Restaurant feels like the perfect reflection of Mayfair itself — elegant, refined, + effortlessly chic. As soon as you step through the door, you're greeted by a sleek, modern space that still manages to feel intimate + welcoming. The design, which is something I’m forever drawn in by in choosing a new restaurant to try, is understated but luxurious, with soft lighting + polished finishes that create the perfect backdrop for a chic London afternoon or evening.

The menu, much like the setting, is a celebration of simplicity + sophistication. The dishes here are the kind you savour, each one thoughtfully crafted with an attention to detail that elevates even the most familiar ingredients. The atmosphere, too, adds to the magic — something that, as I said too about the design of a space, absolutely ignites in me a love of somewhere. There's a quiet hum of energy—polite conversation, the clink of glasses, + a sense of delight that lingers in the air. I was there for a solo lunch while I took a work call + what I love most about Mount Street is that it doesn’t try to be flashy; it lets the food + the experience speak for themselves. It’s a place that invites you to slow down, to escape the city energy.

DOVE

Formerly Orasay, Jackson Boxer’s transformed Notting Hill restaurant has re-emerged as Dove — softer in spirit but still anchored in his poetic approach to food. The menu leans coastal + creative, with delicate plates that whisper of the sea + the seasons. It’s intimate, elemental, + quietly confident — the kind of place that reminds you why dining in London can still feel deeply personal.

DORIAN

Dorian in Notting Hill feels like a treasure just waiting to be enjoyed. Despite how you got there, whether through it’s celebrity status or just strolling on by, it’s the kind of place you stumble upon + instantly feel at invigorated by — it’s warm, relaxed, + buzzing with personality. The vibe is effortlessly cool, with chic but cozy interiors that makes you want to linger over your meal just so as to be there a little longer. The menu is a celebration of fresh, seasonal ingredients, with each dish packing bold flavours while, in the best possible way, lacking major fuss. One fun fact about Dorian—it’s actually named after Dorian Gray, which gives the restaurant this timeless, almost mysterious feel. You can definitely sense that in the atmosphere, which strikes the perfect balance between elegance + comfort.

STRAKERS

Having recently tried Strakers in Notting Hill, I’ve got to say, it is one of those places that leaves a lasting impression, even after just one visit. I went with one of my best friends for a beautiful sunday lunch + from beginning to end we both loved each part of the experience. Inside is a perfect blend of relaxed charm + understated elegance, the restaurant is very much the kind of spot that encourages you stay a little longer in order to enjoy the experience + each single bite. The food was simple, yet so delicious — the seasonal menu spoke so eloquently to the power of showcasing the best of what’s available.You can really see how the head chef, Daniel Straker, brings a thoughtful approach to the menu, focusing on locally-sourced ingredients + flavour combinations that really hit the mark. While I’ve only been once, very much understand the cult following Strakers has as one of those spots that’s easy to return to.

CHILTERN FIREHOUSE

Chiltern Firehouse has a vibe all its own—energetic, buzzing, + effortlessly glamorous. From the moment you step inside, you’re hit with an undeniable sense of excitement. The place is always alive with chatter, the clinking of glasses, + that electric atmosphere that makes you feel like you’re somewhere where jut about anything could happen or anyone could walk through. The decor is sleek yet warm, with a hint of old-school glamour, while the crowd is a mix of chic locals + visitors (oftentimes celebrities frequent Chiltern in general) soaking in the scene. The food? It’s good but what’s best is the energy + atmosphere for me.. It’s one of those places where the energy of the room is what always brings me back for more. Whether you're there for a casual drink or a full meal, the vibrant energy of Chiltern Firehouse is definitely a must.

THE NOMAD

The NoMad Restaurant is the kind of place that instantly pulls you into its world. With its high ceilings, lavish interiors, + just the right mix of opulence + coziness, the atmosphere feels both grand yet welcoming. The energy here is effortlessly chic, with a crowd that knows they’re in for something special. It’s that perfect blend of excitement + sophistication.

And the food? It completely lives up to the hype. Every dish feels like a masterpiece, with rich, bold flavours and impeccable presentation. From the signature roasted chicken to the indulgent desserts, each bite takes you on a journey. I also experienced here with one of my beautiful close friends + it’s safe to say that The NoMad — in all it’s offerings — never fails to deliver an experience that makes it's way into your heart.

An interesting tidbit: The NoMad Hotel in London occupies a former magistrates' court building in Covent Garden, which adds to the unique charm of the space. The history of the building, which dates back to the early 1900s, blends seamlessly with the hotel’s modern luxury, creating an atmosphere that's both stylish + very much steeped in history. Some of the hotel's beautiful rooms still have cell doors from the time of it’s former rendition.

Umu in Mayfair is the epitome of refined, authentic Japanese dining. Tucked away in a quiet corner of Mayfair, this Michelin-starred restaurant serves up exquisite sushi + delicate dishes crafted with the finest ingredients. It is undoubtedly a unique encounter, a treat for sure. The atmosphere is serene yet sophisticated, with every detail designed to elevate the dining experience. The sushi here is truly exceptional — perfectly balanced, beautifully presented, + full of fresh, clean flavours that allow the fish remain the centre of it all.

Fischers in Marylebone has that old-school London charm that makes you feel like you've stepped into a timeless classic. On my visit, I couldn’t help but be drawn to its warm, inviting atmosphere—a mix of vintage elegance + cozy comfort. It’s the kind of place where you feel like you’ve found a hidden gem, even though it’s been a beloved spot for years. The menu is full of delicious, hearty Austrian-inspired dishes, + everything is prepared with that perfect balance of comfort + sophistication. I had one of the best schnitzels I’ve ever tasted—crispy on the outside, tender on the inside. Whether you’re a regular or a first-timer, Fischers offers that rare combination of classic London dining + genuine warmth.

This past year while traveling over + back to London to see clients, I started seeing Katie England, the extraordinary facialist come all round beautiful human who.. let’s just say KNOWS skin like no one else I’ve ever met. My best friend introduced me to Katie’s brilliance who, for the past number of years, has held a residency at the Nomad Hotel in Covent Garden in London where clients travel from all over the world to book in for a Katie England experience.

In meeting Katie + understanding her ethos + energy I put my trust in her immediately. We have been working on my skin each time I’m in London + each time I realize I feel somewhat more confident now to leave the house sans makeup, it reinforces my belief that seeing Katie has become one of the best decisions I’ve ever made. As someone who has always felt incredibly uncomfortable in my skin, self-conscious of how red it can be, I am not joking when I say, I feel like that girl who actually glows when she comes out of a treatment - ok like relatively speaking to that girl but I feel better than I ever have.

Katie is more than a master of what she does though, she is one of the most beautiful souls; a gentle + kind presence that welcomes you into her world with an aura bursting with love for her clients + a passion for + knowledge of the far reaching + often highly-generalised topic of skin health. Understanding the complexity of lifestyles + the effect our entire lives can have on our skin, Katie delves deeper than anyone, knowing the health of our skin is about so much more than any one thing.

Thanks to BYONIK, Buccal, Lymphatic Drainage + Katie’s ever evolving mastery, the progress I’m beginning to feel with my skin is all thanks to Katie, her magic hands + expert recommendations. Working with many different approaches + techniques, Katies creates bespoke treatments for each client depending on your specific needs + skin goals, looking at your overall plan with the foundational knowing that there is no overnight success with anyone’s journey to healthier skin + that gaining confidence in it comes of course with the help of treatments but just as much the self-discipline to do the “homework” between sessions so that her work is even more beneficial when you’re in session with her.

Some Thoughts on Wardrobe Investments

In certain perspectives - not naming names here but .. my Husbands, investments are all about long-term thinking + what the market is doing over an extended timeframe. Here at HAUTE so FABULOUS it’s kiiiind of similar, ok less about shareholders + dividends or IPO’s + good ROI’s + more along the lines of CPW’s + capsule collections that make your girlfriends do a double take. Like a really stone androgynous look that serves up a vibe + dart placements that work just right. Quality over wuantity, when it comes to wardrobe investments, it is about the chic that will stand the test of time.

Taking a long-term vision when it comes to your wardrobe is key in building a long standing + well-established classic collection that works for you whatever the season, reason or your personal mood or style - all of which can evolve without restrictions. When it comes to building a really reliable wardrobe, I’m a huge believer in investment pieces that work within a vast array of situations + parts of your life; things that not only stand the test of what’s on trend at any given moment but pieces that serve up some major wows no matter how many times, occasions or seasons they may see or be spotted. And within the long-term vision of investments, it’s also about those pieces you trust will hold their value for when you may fall out of love with them or they simply aren’t your vibe anymore. Like I said, we evolve + so does our sense of self. Style isn’t a permanent thing. It’s transient + continues to flow as we progress into a more confident + content or perhaps just different place in ourselves; with that we don’t need to hold on to what no longer feels like us or brings us joy. I have always been selling pieces on consignment + preowned luxury platforms over the last few years with this philosophy in mind + the attitude that I don’t mind investing a little more in what I know I will wear a lot + that will be snapped up in a second within the pre-loved market.

Along with consignment stores or online pre-loved market, something to consider when building your wardrobe is the gift of great sample sales. Sample sales are the best. Earlier this year for instance, I bought two new pieces from a luxury coat label I love even though it was almost summer, I know they will be amazing come Winter. They did a one off sample sale + it was incredible to pick up new pieces I know I will have for life regardless. Websites to consider for luxury items with a discount too are GILT, where items can be found for 60% off. THE OUTNET is one I search on a lot; with up to 75% discounts on premium brands from the YOOX Net-A-Porter group.. what’s not to love!

But whether it’s a straight up new purchase, something with an irresistible discount, sample sales or a pre-loved purchase, some important questions to ask yourself when it’s an investment for you are:

  • Is this “me” beyond this exact season or reason of purchase - will I wear it season on season +to many different events?

  • Have I thought about it for a while or am I being impulsive? When it’s a big purchase I leave it for a while to make sure I keep coming back to it + am not simply lusting but truly in love.

  • Is what I’m looking for available on any of the pre-loved websites + stores who all work incredibly hard to make fashion more sustainable? Do I really need to own it new? Like really!!

  • Can I wear it day + night? Dress it up + down? Does it have scope beyond that initial love at first sight?

  • Does it go with around 4-5 looks I wear often if it’s an every day item?

  • If I do eventually fall out of love with it which is so possible, does it have a good resale market?
